KATIE FRU’S AMAZING & HEALTHY COLD PASTA SALAD
I had all these ingredients around my apartment, and I thought, why not throw them together and make an amazing cold pasta salad for my lunches, etc. So easy and so yummy, plus healthy and filling.
- whole wheat pasta
- chicken breast (I just cooked in a pan with a touch of olive oil—seasoned with garlic powder, onion powder, tiny bit of salt and pepper)
- red onion
- black olives
- hearts of palm
- mushrooms (I used canned cause i had them, but fresh of course would be even better!)
- artichoke heart pieces (Trader joes sells these frozen. They are good.)
- And the KEY—light champagne dressing to coat (but dont over do it—soggy salad sucks)
Other things I love in it but did not have are: green pepper, snow peas and uncooked broccoli.
